Embutidos Ezequiel's Botillo is an authentic gastronomic jewel that represents the tradition and excellence of León's cuisine. This exquisite cured meat is made following centuries-old recipes that have been passed down from generation to generation, keeping alive the authentic and original flavour that characterises it.

It undergoes a traditional curing process which lasts between 3 and 4 weeks. During this time, it acquires its unmistakable smoky flavour and juicy texture, perfect for slow cooking. It is a product with an intense and characteristic flavour, which can be enjoyed either cooked or grilled. How can I eat Botillo?

Soaking: To improve its flavour, it is advisable to soak it for several hours, preferably overnight.

Cooking: Cook the Botillo over low heat in a large pot. Add enough water to completely cover the Botillo. Bring to a boil and then reduce heat. Cook for about 2-3 hours, or until the meat is tender and easy to shred.

Presentation: Botillo is traditionally served with cachelos (boiled potatoes), cabbage, chickpeas and chorizo. Here is our special recipe for botillo with cabbage.

Storage: It can be kept for about 3-4 days. For a longer shelf life, freeze it in portions for later consumption.
