How can I eat Cured Marinated Goat's Leg?

Cured goat's leg can be eaten sliced, without the need to cook it, after all it is considered ‘Cecina de chivo’.

Recipe for Cecina de Chivo Entrecallada:

  • Preparation: The night before, soak the ingredients for approximately 8 hours. Place the goat meat in a pot, cover with water (approximately 1 cm above the meat) and cook under pressure for 1 hour and 15 minutes in a normal pot, or 30 minutes in a fast cooker.
  • Presentation: Once cooked, serve the meat without the broth, keeping the broth separate. This traditional dish is served with lettuce or endive salad, providing a perfect balance of flavours.
