The 75% Iberian Acorn-fed Shoulder (Paleta de Bellota) is a premium delicacy sourced from Iberian pigs raised free-range in the Spanish dehesa and naturally fed on acorns during the montanera season. This unique environment, combined with carefully selected genetics, results in balanced marbling that enhances juiciness, aroma and flavor complexity. Crafted through a traditional process of salting and slow curing in natural drying facilities for over 20 months, it develops a rich, intense and refined taste.
Smaller yet more flavorful than ham, the shoulder offers a more concentrated aromatic profile and a deeper tasting experience. When sliced, it reveals a bright red color with fine marbling that melts smoothly on the palate, delivering a tender and elegant texture. Perfect for charcuterie boards, tapas or wine pairings, it stands out as a premium product combining authenticity, tradition and bold Iberian character.
