This feeding system, combined with the breed’s unique genetics, promotes exceptional marbling, enhancing juiciness, shine and a well-balanced flavor. It is produced using traditional methods of salting and slow curing that can exceed 24–36 months, allowing the ham to develop a rich aroma and a refined, delicate texture.
