Without its chorizo, Embutidos Ezequiel would not be what it is. Ezequiel's chorizo represents our roots, our origins.
The key? Our raw materials, of course. We are committed to guaranteeing the best possible quality for each one of the ingredients that make up our chorizo: the pork meat, the paprika with the Protected Designation of Origin ‘Pimentón de la Vera’ and the garlic, sealed with the Protected Geographical Indication ‘Ajo de las Pedroñeras’. To all this we need to add the right amount of salt. Once the mixture has settled, it is time to shape the sausage: guided by tradition, we introduce the meat in natural gut casings that are then knotted with thread, using techniques from our culinary heritage.
However, our chorizo will not be ready until the smoking process is completed, since that is how it gains its particular nuances. We smoke our chorizo in our carefully located cellars, using oak wood so they can finally achieve their traditional flavour.
