In Embutidos Ezequiel we preserve our heritage and strive to manufacture our Cecina with the highest possible quality and the finest nuances. As a result of this careful process, carried out with utmost respect for tradition, our Cecina is protected by the Regulatory Council of the Protected Geographical Indication (PGI) ‘Cecina de León’.
The raw materials are vital in the manufacture of our Cecina. We select only the best quality meat. Each piece is carefully salted by our experts and then desalinated. That way we make sure that our cecina contains just the right amount of salt.
However, achieving the best cecina is a matter of patience. Each piece must settle to obtain a balanced flavour. Later, they will be smoked in the traditional way, using oak wood, which will finally give them their particular aroma and flavour. Finally, the cecina must be matured in our cellars. After this process, the excellence of our product is guaranteed.
